Carcase Trials
  2006 - F2 Bazadais Cross (Bazaman) Trial by John & Cathy McFarlane
 
 

This is a trial we started early in 2006 and the aim was to see how Bazadais cross bull meat compares with our other local trade Bazadais cross meats.

Showtime was a F2 (2nd cross) Bazaman sired by Greenmount Jupiter, born on 22/6/05 and was processed on 5/12/06 which makes him 17 1/2 months old.

 

He had a none curfew weight of 608kg and he dressed out at 340kg. Showtime had 91 days on Ridleys Show & Grow pellets @ 5kgs a day and pangola hay. Prior to that he was running with the other young bulls on fertilised Signal and Rhodes grasses.

 

Once again the results showed that the meat was outstanding in every respect, however the serving portions were, to say the least ,slightly on the large size. We had intended to process him after 40 days on pellets however there wasn't enough freezer capacity in the household.

 

My taste testers have been extremely happy with the meat and as a retired chef said that considering this meat was processed, frozen and then thawed and yet it was far superior to the 300-400 day grain fed and 90 day aged meat that he had used. I have a few a more samples to deliver yet so if the comments are in the same direction then we will be very happy . I was also informed that it was better than the same cut of meat served at a certain major hotel in Brisbane, fuller flavour that didn't have to be covered with a sauce to obtain that flavour. Another comment from my testing crew stated that not many breeds could have a Jap ox carcase that was equally suited for the restaurant trade.

 

This shows what amazing consistency the Bazadais and Bazadais cross have, we have now processed steers, heifers, yearlings, cows and now a bull and they have all rated well above anything else.

The first progeny by a F1 Bazaman bull has been processed with outstanding results. The steer was bought by Steve and Leanne Fogarty from Rick Kaddatz last year and has run on grass here on the coast with access to Anipro lick.

"Anipro 23" was processed last week and had excellent fat cover and had a top saleable meat yield of 78% . Otto from Walkerston Country Meats was once again full of praise for the tenderness and meat colour. He was very impressed that it was only 25% Bazadais out of a straight Brahman breeder.

"23" was approx 17 months old and dressed at 216kg. We have just returned from Kuttabul where "Anipro" 24 was processed this morning he was approx 19 mths old and dressed 257 kg and "P" for perfect with good rump and rib cover. These results were 5 years in the making and worth ever bit of it. The meat looks and cooks and more importantly tastes like F1 Bazadais, to say that we are happy with the results would be an under statement.
