Mr Michael Mclean owner of the Romeo and Juliet's Restaurant in Mackay was proud to host a tasting session to launch the "Bazaman" beef for their menu. Mr McLean has worked in conjunction with Ray Villain of Walkerston Country Metas for the retail supply of the meat and John McFarlane, Greenmount Bazadais, who coordinates the supply and promotes the Bazadais cross bred cattle in the Mackay region. "From an owners and Chefs point of view the Bazaman meat gives us the confidence of the end result whether its well done or rare, the moisture and quality of the meat is there to be appreciated. The chefs don't have to worry about a heavy gravy to add flavour like they used to before, and the customer feed back is the best we have ever had. We hope to be able to add this world class meat to our other restaurant as soon as the supply becomes available" Michael said.
Mr David Phillips from Mackay Tourism said that this will help promote the Mackay region as it has something no one else has in Australia. "Not only was this area the first outside of France to have the Bazadais available at the retail level through 3 butchers shops we now have the first Restaurant in Australia using the Bazadais cross meat exclusively on their menu. I am very proud that the crossbreeding program was developed here in the Mackay district and now the circle is complete as we can now truly say "from paddock to plate" " Mr Phillips added.
Ray Villain who has always been involved with the Greenmount Bazadais trials and promotions said, "We at Walkerston Country Meats have used cattle sourced from Monto, Capella and soon the Pentland Regions. Quite frankly we have never seen a breed that has the meat consistency of the Bazadais cross in all areas and this is very important to our ever growing customer base".
